Looking for an easy Bacon Zucchini
Carbonara recipe? This is a rich dish that I continue to use, especially for
entertaining. After all, what’s not to like about a recipe that begins by
cooking bacon in some olive oil?

bacon Zucchini

Ingredients / Shopping List:

12-16 ounces pasta (1
box pasta)

1/2-1 pound bacon (extra
thick is best cut into 1/2" pieces)

1 zucchini (sliced
into thin ribbons)

1 lemon

2 cloves garlic, sliced

2 ounces Pecorino or parmesan cheese

2 eggs (separate the
egg yolks from the whites and discard the whites)

1/2 pint heavy
whipping cream

10 chives optional

salt & pepper to
taste

1 handful chopped fresh parsley

Olive oil

Equipment: Before you start
cooking, it’s important to get yourself a very large pan, or use a high-sided
roasting pan so you can give the pasta a good toss. (A 14 inch pan is a good
start-every house should have one)

Cooking
Steps:

Bring a large pot of salted water to a boil. Add the pasta and cook until al
dente (usually about 30 seconds to a minute less than the package instructions
recommend).

While the pasta
cooks, heat a large sauté pan over medium heat. Add a good splash of
olive oil and fry the bacon until dark brown and crisp, about 5 minutes. Transfer the bacon to a plate lined
with paper towels. Add the onion, zucchini, and garlic and cook for 5 to 7
minutes, until soft and lightly browned. Stir back in the bacon and season with
a bit of salt and plenty of coarse black pepper not just to season
but to give it a bit of a kick. Give
everything a stir, so the zucchini is coated with all the lovely bacon-flavored
oil, and fry until they start to turn lightly golden and have softened
slightly.

Creamy Sauce

To make your creamy carbonara sauce, put the egg yolks into
a bowl, add the cream and half the parmesan, and mix together with a fork.
Season lightly with salt and pepper and set aside.

It’s very important to get this next bit right or your carbonara could end up
ruined. You need to work quickly. When the pasta is cooked, drain it, reserving
a little of the cooking water. Immediately, toss the pasta in the pan with the
zucchini, bacon and lovely flavors, then remove from the heat and add a
ladleful of the reserved cooking water.

Pour cream mixture
into the pasta, and stir over low heat for one to two minutes
(no more cooking now, otherwise you’ll scramble the eggs.)

Serve in warmed bowls
with the remaining pecorino or Parmesan cheese and more black pepper.
